Mixed Vegetable Pakoras or Fritters are a lovely variation for Snacking on any day. These are absolutely yum and loved by many for Iftaar as well. Infact it's a must-have during Iftaar meals at my place.
It's not only a fantastic variation but also quite delicious too. You can make these with whatever Vegetables are handy.
They get done very easily too.
The only glitch being that it needs to be fried and hence doing it in the kitchen is a big trouble in this scorching Summer heat. But otherwise it's absolutely fine. In Winters and Rainy Seasons, making these is a delight.
We Indians love to relish these with a hot cup of Tea at Shaam Ki Chai or Tea-time. And Iftaar meal is a must have in Ramadan and therefore it's a hit. People love this variation and hence make these for Iftaar meals like I did. However these can be made both ways, one with Gram Flour or Besan and the other with Rice Flour.
I have used the first one to make these beautiful looking Fritters.

Make a thick batter with all the ingredients mentioned. Use of water depends on the quality of the flour used. Make sure you mix it with your hands. Wash your hands thoroughly before doing so. Keep aside for 15 minutes.

Drop small balls in hot oil as we do for the pakoras or fritters. Fry few at a time. Use a clean spoon if you cannot do it with your hands. Stay safe while frying. Fry until golden brown and crisp. Take care not to burn them. Keep an eye while frying. Keep turning at regular intervals to ensure that they are evenly cooked.

Serve these tempting and irresistible pakoras alongside any of your family's favourite dip or chutney. Enjoy! Yum!
