Pista Lassi or Pistachio Lassi is an easy, rich and delicious lassi made with yogurt, pistachios, kewar essence and simple syrup. A great drink for iftar. It cools the body, soothes the heart and fills the tummy!

Lassi is a traditional summer beverage in Pakistan and India and is made mainly with yogurt. Lassi can be sweet or savory, depending on personal preference. Personally, I like the salty one and can drink it even in winter!

The base of this drink is yogurt. For the sweety version, sugar, honey or simple syrup is used as sweetener. For the salty type, salt or black salt is the main spice.

Modern versions include fruits, or herbs for added flavour to the drink. Then there is the nutty lassi having different nuts particularly almonds and pistachio.

Pista Lassi, as the name suggests, is made with pistachios and yogurt with sweetener of choice. This delectable lassi is guaranteed to rejuvenate you after the long fasting. It can also be served for suhoor to kick start the day.

Pistachios make for a valuable addition to this soothing beverage. You can make this lassi creamier and rich by adding fresh cream while blending. You can also mix some cashews to this mixture. If you want to accentuate the taste of this lassi, add a few strands of saffron to the blender and garnish it with pistachios and saffron.
