Step 1
wash, clean, and cut fish in half; add fish to a large bowl of buttermilk and marinate for at least 1 hour before cooking. - 2
Step 2
In a large bowl, whisk together flour, garlic powder cornstarch, onion powder, Cajun seasoning, and Italian seasoning. Whisk to combine. (you can use whatever seasonings you want) - 3
Step 3
Season tilapia filets generously with salt and pepper, then dip each in flour mixture, shaking off any excess flour. Place on a clean plate or baking sheet and refrigerate for 30 minutes to allow coating to adhere to the fish. - 4
Step 4
In a large, nonstick skillet over medium heat, heat oil. Add 2 filets and cook 3 to 4 minutes per side, until crust is golden and fish flakes easily with a fork. Repeat with remaining filets. - 5
Step 5
Serve immediately with cilantro and lime wedges.
