Fresh crabs placed in a tub with Abit of salt (optional) so they can spit out the dirt, seawater etc

After 20mins cut the flap of the crab out, and stab the middle to kill it. After dead use a brush to clean the crab, then rip the head out. Some people like to eat the guts so the only part I'll take out are the white bits and lungs.

Place onto a plate, under high heat steam crab for 10-15mins depending on the size

After cook cool it under room temperature, then drain water and pop in fridge for a couple of hours. Serve Cold with Chinese red vinegar. Done!
