Ingredients

  1. Meatloaf
  2. 2lbs. Ground Beef (Or 1 lb. Beef & 1 lb. Ground Pork)
  3. 1Sweet or Yellow Onion (Finely Diced)
  4. 2Eggs
  5. 4 ClovesGarlic (Minced)
  6. 1/4 CupFresh Parsley (Chopped)
  7. 3 TbspKetchup
  8. 3/4 CupPanko Bread Crumbs
  9. 1/2 CupMilk
  10. 2 tspItalian Seasoning (Optional)
  11. 1 1/2 tspCajun or Creole Seasoning (Salt Free, or Add Less Salt)
  12. 1 1/2 tspSalt
  13. 1/2 tspBlack Pepper
  14. 1/2 tspPaprika
  15. Meatloaf Sauce
  16. 3/4 CupKetchup
  17. 2 1/2 TbspBrown Sugar
  18. 1 1/2 tspWhite Vinegar
  19. 1 tspGarlic Powder
  20. 1 tspOnion Powder
  21. 1/4 tspSalt
  22. 1/4 tspPepper

Cooking Instructions

    Preheat Oven to 375°. Over Medium Heat, Add some Oil to a Saute Pan. Add Garlic and Onions, and Saute for a Few Minutes or until Softened and Fragrant. Allow to Cool.

    In a Large Mixing Bowl, Add all Meatloaf Ingredients. With Wooden Spoon and/or Gloved Hands, Fold & Gently Mix everything together. Try not to Overwork Meat.

    Once thoroughly Mixed, Gently drop Mixture into a Greased or Lined Meatloaf Pan. Gently press Mixture down, leaving some Space & Air throughout the Meat. Don't Smash it down. Once gently Packed in the Pan, take your Fingers & Gently Press down around all the Edges of the Pan, making a Bevel around the Whole Outer Parimeter. The Center will be Raised & the Fat will run off on the Sides, as it Cooks.

    Place Meatloaf in Oven, & Cook for 40 Minutes. While the Meatloaf is Cooking, it's Time to make the Sauce. In a Small Bowl, add all Sauce Ingredients. Stir Well. Taste & Adjust, if necessary.

    Take Meatloaf out of Oven. Baste Meatloaf with Sauce. Place back in Oven for about 15 Minutes, or until Meatloaf reaches Internal Temperature of 165°. Remove, & Allow to Rest for around 10 Minutes.

    Serve with Sides & Extra Sauce. Enjoy!
