Sprinkle gelatin over 1/4 cup almond milk. Whisk yogurt, 1/4 cup almond milk, and vanilla until smooth.
Heat 1/2 cup almond milk and sugar (and espresso powder) until dissolved. Add gelatin mixture and heat until dissolved. Whisk into yogurt mixture. (Add berry puree.) Pour into containers and chill.
