Saute chopped onion in oil until starting to brown, add celery and chiptole. combined. Add chicken stock and creamed corn and simmer for about half an hour. Add corn kernels, salt, and pepper, and cool. Blend some of soup to thicken and add back into pot. Heat up and poach scallops in soup just before serving.
