Gujrati Bhinda batata nu shak/allo bhindi ki sabzi

Bhinda batata nu shak is a dry vegetable preparation made using bhindi and potatoes.
It is flavoured with peanuts and regular spices masala.
The taste of this subzi is a little sweet, sour and medium spicy, just like any gujrati sabzi..
It is quick, easy to make ,and loved by all kinds of age groups.

Bhinda batata nu shak is a dry vegetable preparation made using bhindi and potatoes.

Steps

Wash and dry bhindi properly.then cut the upper and lower part of the bhindi and slice bhindi into two'equal parts. Also cut potatoes into medium size chips.

Now heat Oli in a pan, add mustard seeds, cumin seeds, curry leaves, saute it.then add chopped green chilli and ginger paste.saute it

Now add potato chips, turmeric powder and salt mix well.and stir fry chips for 2 or 3 minutes in medium to high flame 🔥.

Now lower the flame and spread potato chips in a pan.

Then spread bhindi slices on the base of potato chips.do not mix it and cook for 2 minutes.

After 2 mnts shake the pan and mix bhindi and potatoes.dont mix with a spatula.

Then every 2 -3 minutes,shake the pan and cook subzi in law flame 🔥.

Meanwhile,in mortal pestle,add peanuts and gathiya, crushed it into powder and add coriander powder, Red chilli powder, cumin powder,dry mango powder, jaggery, salt,garam masala, coriander leaves and mix well. Masala is ready.keep aside.

Now potato and bhindi are cooked properly on low heat,then spread masala on it and mix well.cook subzi on law flame for 2 -3 minutes, so masala absorbs flavour in it.serve it.
