When we make a dish from Bottle gourd, we peel it and let the rind off. But this rind can be finely chopped to make a delicious item. This sambharo made by mixing the chopped bottle gourd rind with chickpea flour is very nice and tasty.
Steps

Peel off the rind of bottle gourd a little thick and chop it finely like this.

Heat oil in a pan and add mustard seeds and asafoetida.

Then add chopped green chillies to it.

Now add chopped bottle gourd rind to it.

Then add red chilli powder, turmeric powder and salt to taste. Add little water and let it cook for two minutes.

Now add chickpea flour and keep stirring so that lumps do not fall and the flour does not stick to the bottom.

Now add lemon juice to it and mix it properly. It has to be stirred continuously till the gram flour rises and the water gets burnt.

We can serve this Sambhara as a side dish in any meal with papad or salad.
