A Green delight that goes well with Chapatis and Rotis. This is my way of frying Kale whenever fresh Green Leafy Vegetables are available aplenty. Simple ingredients go into making this fry and tastes so good too. And to top it all, it's a great one for both Lunch or Dinner. And also a filling one for Breakfast as well. It's also a lovely option for Lunchbox ideas.
And it's easily done with minimum of pantry staples. This fry recipe is a flavourful dish full of the goodness of Leafy Vegetables. I have used Red Onion for this simple fry recipe but you can use normal Shallots or even Spring Onions for a change. Infact it would be equally great and will add a different look altogether as well as make it more flavourful and aromatic. Kale with these Leafy Greens would definitely be a great option for a simple stir fry this Season. It can be a perfect choice for Breakfast and Lunchbox ideas.

In a pan, heat oil and add the cumin seeds. As soon as they splutter, add either ginger-garlic green chilli paste or chopped garlic and ginger. Saute for a minute and add the shallots or the chopped onions. Saute until translucent and add the powdered spices as mentioned.

Followed by the roughly chopped kale. Mix well. Cover and cook on a low heat for 10-12 minutes. Open the lid and adjust salt accordingly. Saute until the raw smell is gone and a bright green colour is seen. It looks amazing with a myriad of colours that are captivating and flavourful too. Garnish with lots of chopped coriander leaves. Serve hot as a side dish to your favourite meal.

Serve hot immediately alongside yummy homemade rotis or chapatis or phulkas. Yum!
