Mouthwatering meal in many a homes in the Country. For a change this time, i made Pakoras with Water Spinach for a yummy twist. They tastes awesome with the Kadhi. The Kadhi gets a unique flavour and texture too. Plus the benefits and goodness of the Water Spinach also gets added on. All in all, a wonderful option on any day. A perfect twist to the simple Pakoras as well.
This makes for an ideal accompaniment to Rice and even Rotis. It tastes so very yummy with so many infused flavours locked within it. And so is this Hyderabadi recipe that is a common sight in most of the Hyderabadi homes. It's a must have dish and people relish it for many reasons. It's a perfect comfort food. The colour also looks so perfect as well as the tempering. Isn't it folks? It has a lovely look and the aroma also is too awesome. Beat curd well along with water at first.To this, add gram flour. Mix it with little water to make a slurry and add it to the cooking pot with curd so that it is free of any lumps. To this also add slit green chillies, ginger garlic green chilli paste, turmeric, red chilli powder, one or two thinly sliced onions and curry leaves sprigs.

Mix well and cook on a low to medium high heat so that it doesn't curdle by stirring continuously for the first 5 minutes and afterwards doing it at regular intervals of 3-4 minutes. After 15-20 minutes of cooking, when the raw smell fades away. It's almost done. It gets thicker too. The thickness depends on your choice altogether. You can adjust it with hot water as required Meanwhile wash and keep the water spinach ready. It should be roughly chopped as well.

Meanwhile make a semi thick batter for the pakoras using all the ingredients mentioned. Water spinach added to it gives it a unique flavour and texture. Also it tastes super yummy.

Drop small balls into hot oil. Deep fry on a medium-high heat until done. Keep some aside and drop the others in the prepared kadhi. Cover and let it soak before serving. Serve this comfort meal with simple boiled rice. Enjoy!
