Ingredients

5 minutes boil, 55 minutes rest.
4 people
  1. indonesian turmeric version
  2. 1 cupdry long grained white or brown basmati rice, makes 2 cups cooked
  3. 2 cupswater for weekday version, or
  4. 2 cupschicken bouillion or vegetable bouillion for special version, or,
  5. 2 cupscoconut milk for festive version
  6. 1 Tspturmeric
  7. 10 dropssesame oil
  8. persian saffron version
  9. 1/8th teaspoon of saffron in 2 Tbs boiling water with 1/2 Tsp salt
  10. 1 Cupbasmati rice
  11. 1Shallot, diced, sauteed 5 minutes
  12. 1 Tbsolive oil
  13. 2 cupsWater or chicken bouillion
  14. Equipment: one quart sauce pan with lid, cast iron works best
  15. Cost: 3 cents for weekday portion, 25 cents for special version, 65 cents for festive and saffron portion

Steps

5 minutes boil, 55 minutes rest.

    INDONESIAN. Mix cold water or coconut milk with turmeric, add dry white basmati rice and bouillion cube, add sesame oil, stir once, bring to hard boil. Turn off, put lid on, rest 55 minutes till cold. Brown basmati rice needs to rest 30 minutes longer. Fluff and serve.

    PERSIAN. Rinse rice, drain. Sautee shallot, add rice, sautee 5 minutes. Grind 1/2 Tsp salt, saffron, bloom in 2 Tbs boiling water, stand 5 minutes. Add saffron, 2 cups boiling water or bouillion, stir, bring to boil, cover, turn heat off and let sit an hour. Fluff and serve.
