Spinach, Pesto And Chicken Penne

A quick delicious pasta dish that can be served anytime. Full of flavor. So easy it's a great standby when your in need to make something quickly.

Ingredients

  1. 1 poundboneless skinless chicken breast cut into bite sized pieces
  2. 6garlic cloves, minced
  3. 10 ouncesfresh spinach
  4. 1 pounddry penne past
  5. 1 teaspoonred pepper flakes
  6. 2 tablespoonspre made pesto sauce
  7. 1/4olive oil
  8. 1 tablespoongarlic powder
  9. 1 teaspoonsalt
  10. 3 ouncesparmesan flakes

Cooking Instructions

    In a large pot start boiling salted water to cook penne.

    Over medium heat in another large pot add olive oil. Add in pepper flakes and garlic. Cook until just fragrant. 1 minute. Add chicken.

    Add in garlic powder and salt. Let chicken cook until no longer pink. Add in the spinach and pesto sauce. Stir well.

    Once pasta is two minutes from being cooked, reserve 1/2 cup of cooking water. Drain the rest of the pasta. Add into pot with chicken. Add in the cooking water.

    Continue to cook until water is fully absorbed by the pasta. Taste and check for seasonings. Adjust now to your taste. If pasta is too dry add in a small amount olive oil. Top with parmesan and serve.
