Adapted from a Cuban style braised beef recipe I found years ago, this is just something simple that I throw together regularly for dinner.
Slow Cooker Braised Beef and Peppers
Adapted from a Cuban style braised beef recipe I found years ago, this is just something simple that I throw together regularly for dinner.

Combine tomatoes, chiles, and spices in a crock pot and stir to combine. Add a couple big pinches of salt & pepper.

Layer onions and bell peppers on top of tomato mixture.

Top onions and peppers with roast and season with salt & pepper (*I'm certain you could use whatever cut of beef you like or have on hand.)

Cook on high for 4-5 hours or low for 7-8 hours. Once the meat is tender, shred it up, return to the crock pot and finish with the juice of a lime, adding salt and pepper if needed. Serve with avocado, sour cream, rice, tortillas, whatever you like.
