In this scorching hot summer, subji with minimal masala/spices and with light water subzi is the best option for the main meal as well as the side dish. This less spicy and water containing , summer 🌞 veggies check dehydration, bowl issues and best for digestion.

I have prepared such a subzi with drumsticks and other summer veggies. This is known as 'Santula' in Odisha and cooked in each household as a common and delicious recipe. This Subji can be taken with lunch/dinner/breakfast.

Ingredients

10 minutes
4 servings
  • 4drumsticks
  • 2potatoes
  • 250 gmpumpkin
  • 2tomatoes
  • 1onion
  • 1 Tbspchopped garlic
  • 2-4green chilli
  • 1dry red chilli
  • 1 Tspmustard oil
  • 1 Tspmustard oil
  • 1 pinchturmeric powder
  • Salt as required
  • 1 cupwater

Steps

10 minutes
  1. 1

    Arrange the ingredients. Chop the veggies as mentioned above. Boil drumsticks first and then the rest veggies with salt and turmeric powder for one whistle.

    Heat mustard oil, add mustard seeds and allow to crackle. Add dry red chilli, green chilli, chopped onion and crushed garlic.

    Saute on low heat till aromatic. Add chopped tomatoes and a Tsp water. Cook till tomatoes are softer. Mix well with the boiled vegetables. Bring to boil. Serve with steamed rice and/Roti
