Edamame Masala

Edamame Beans or young Soy Beans is a great option for everyday meals. These can be enjoyed even as a lovely Snack or a Brunch as well as in the form of full fledged Curry or Sabzi too.
In this particular Vegetarian dish, I have made it using a few simple spices with a blend of Tomatoes and Onions for the tempting Masala.
The best part is that it goes well alongside both Rice and Rotis. Also it gets done quickly too without much hassles.
These Green and immature Soy Beans or Edamame Beans are an excellent source of dietary Fibre, Antioxidants and Protein. They are harvested before harden or ripen. These have a great texture and flavour with an abundance of Vitamins and Minerals especially Vitamin K and Folate.
These are served as appetizer in restaurants. They are gluten free and low in calories. Hence these make for an excellent diet plan for all those fitness freaks out there.

In a wide mouthed pan, heat the oil and add the ginger garlic green chilli paste. Fry for a minute. Now add the chopped onions. Saute until these are a bit translucent. Also add the powdered spices. Add chopped tomatoes as well. Mix well and cook on a low heat only.

Meanwhile wash all the edamame beans and set aside to drain. Cover and cook until the tomatoes are soft and mushy.

Now is the time to add the young soy beans or the edamame. Also add half of the chopped coriander leaves too. Cover and cook until done. It doesn't take much time. Adjust salt and take it off the heat. Garnish with the other half of the coriander left. That's it. It's all ready and done. Yum!

Serve hot alongside rotis or rice. It tastes yum with both. Enjoy!
