Honestly, when I was living in Japan, I never attempted to make it even once. That's because I thought it would be difficult to make and need special skills. Ingredients

  • 6Strawberries
  • 100 gGlutinous rice flour (You can find it Asian grocery shop)
  • 25 gSugar
  • 300 gAnko (Sweat red bean paste) - will publish recipe!
  • 1 tbspCornstarch
  • 170 ccwater

    Scale the Anko for 50g each and make it round ball.

  2. 2

    Put glutinous rice flour, sugar, and water in a bowl and mix until there are no lumps.

  3. 3

    Strain once using a sieve (recommend to not skip this step!)

  4. 4

    Transfer to a container, cover with cling film, and put it in microwave for 2 minutes with high power.

  5. 5

    Mix using a spatula. Knead the mochi until it becomes stretchy. Then put it in microwave again for 1minute.

  6. 6

    Then knead the mochi again.Put the cornstarch on the surface of mochi to prevent sticking. Put mochi on cling film.

  7. 7

    Divide the mochi into 6 equal portions, approximately 50g each.

  8. 8

    Place a portion of sweet red bean paste (anko) in the center of the mochi and covert it.

  9. 9

    Make a small incision in the center of the mochi. And place a strawberry on top. Your strawberry daifuku mochi is now ready to be enjoyed!You can put other fruit like grapes, kiwi instead of strawberry.🍇🥝
