During the time when my husband was still a student and studying in Italy, I visited him from Japan. We went to a famous tiramisu shop where I wanted to go, and it was tasty! But he told me that ‘My roommate - Francesco's tiramisu is the best’. I was quite surprised, and from that day on, I had a strong desire to try Francesco's Tiramisu🤣 After five years, when fate brought us all together in the same city in the UK, Francesco showed me how to make it!! It happened just before we left the UK, and it turned out to be a wonderful farewell gift for me🥰 Since learning this recipe, I make this tiramisu whenever there's a celebration or something joyful. My husband is very happy that he can eat his best tiramisu in life wherever. Grazie mille Francesco! 😘

Make the espresso for 6 serves.

Separate the egg yolks (in a large bowl) and the egg whites.

Add one tablespoon of granulated sugar per egg to the egg yolks and mix on high speed until they turn white.

Add a pinch of salt to the egg whites. Mix on high speed until stiff peaks form when a small spoon is lifted.

Mix the mascarpone cheese into the bowl with the egg yolks.

Gently fold the beaten egg whites into the mixture from step 5

In a separate container, layer soaked ladyfinger biscuits, mascarpone mixture, and sprinkle cocoa powder on top.

Repeat step 6 to create a second layer.

Let it sit for 1-2 nights in the fridge before serving, as the flavors develop over time.
