California Farm Griddled Barbecued Salmon

You can turn your own barbecue grill into a $500 griddle with a ceramic floortile or a pizza stone. Home Depot will cut your floortile to size to fit your grill, your oven and your sink, if these are smaller than your tile. Our pizza stone is a $5 ceramic floortile from the local Home Depot building supply store, 14” x 16”, 20” on the diagonal. You can also use a 14” round cordierite pizza stone.

Party time! A whole Atlantic salmon filet of 3 pounds is too big to sear in a cast iron skillet, but can be seared and smoked to perfection by griddling on a pizza stone in a charcoal wood fire barbecue to get both that smoked flavor and griddle juiciness, without flare up

Ingredients

  1. 3 poundAtlantic salmon filet, the thicker the better, skin on, up to 20” long
  2. 1 Tspeach Dill weed, himalayan rock salt, crushed green peppercorns
  3. 1Chimney of mesquite charcoal, 4 pounds
  4. 1Chimney of soaked oak firewood, 4 pounds
  5. 1Spray of high smoke point avocado oil on salmon skin
  6. 24green asparagus spears
  7. 6 Tbsmicrowave hollandaise sauce : 6 Tbs unsalted butter, 3 Tbs water, 2 egg yokes, 1/2 tsp each vinegar, lime juice, mustard, salt, pepper

  8. Juice of 1 lime, 1 Tbs
  9. Equipment: pizza stone, charcoal chimney, 2 glass measuring cups, microwave, hand held laser thermometer. Large serving platters

  1. 1

    Make white hot barbecue fire with mesquite charcoal next to pizza stone under the grill, make oak wood fire next to stone on top of on top of the mesquite, when pizza stone is over 450F degrees and wood is flaming, lay oiled asparagus spears on top, sear on all sides, 5 minutes, put on warm serving platter under kitchen towel.

    Rub salmon filet top side with crushed green peppercorns, dill weed and himalayan rock salt, rub salmon filet skin on bottom with high smoke point avocado oil, lay on top of 450+ F degree griddle stone. Griddle 5 minutes. Close barbecue top and dampen airvents to get a good wood smoke. For medium rare, leave salmon to griddle and smoke 7 minutes if 1” thick, 15 minutes if 1 1/2” thick. Check every few minutes.

    Enough time left to make the hollandaise sauce: in glass measuring cup, whip egg yoke, 2 Tbs water, tsp red wine vinegar, tsp dijon mustard, tsp ground pepper. In second glass measuring cup, bring 4 Tbs unsalted butter to bubbling in microwave, drizzle into first glass mix while stirring, stir in lime juice, done. Serve buffet style, so guests can scoop up as much salmon, hollandaise sauce and asparagus as they like. Enjoy.
