When I am too tired to cook anything, a rice bowl is the go-to dish as I almost always have some Cooked Rice. Canned Fish is a life-saver, and it allows me to make a rice bowl quickly and easily. Ingredients

5 minutes
1 Serving
  • 1 tablespoon (15 ml)Miso *White Miso recommended
  • 2 tablespoonsWater
  • 1/4 teaspoonDashi Powder *I used Kombu (Kelp) Dashi Powder
  • 1/4 teaspoongrated Ginger
  • 5 cmCucumber *thinly sliced
  • 1 can (120 g)Mackerel in Brine
  • 100 gSoft Tofu *I used Silken Tofu, cut OR broken into bite-size pieces
  • 1/2Spring Onion *finely chopped
  • 1serving Cooked Rice
  • Toasted Sesame Seeds

Steps

5 minutes
  1. 1

    Place Miso, Water, Dashi Powder and Ginger in a bowl, and mix well. Add Cucumber and mix to combine.

  2. 2

    Drain canned Mackerel, break into bite-size pieces, add to the bowl and mix. Then add Tofu and Spring Onion, and gently combine.

  3. 3

    Half fill a bowl with Cooked Rice and cover it with the mixture. Sprinkle with some Toasted Sesame Seeds, and enjoy. *Note: I saved some Spring Onion and placed on top.
