Ingredients

50-70 minutes
3-4 people
  1. 1chicken breast
  2. 1red bell pepper
  3. 2green onions
  4. 12dried peppers (tianjin peppers, or similar)
  5. 1zucchini
  6. 1/4 cupraw peanuts
  7. 4 clovesgarlic
  8. 1 tbspginger
  9. Red pepper flake
  10. Vegetable oil
  11. Marinade
  12. 4 tbsplow sodium soy sauce (or 2 tbsp full sodium soy sauce)
  13. 2 tbsprice vinegar
  14. 1 tbspcorn starch
  15. 2 tbspbrown sugar
  16. Salt
  17. Sauce
  18. 2 tbspShaoxing wine
  19. 4 tbsplow sodium soy sauce (or 2 tbsp full sodium soy sauce)
  20. 1 tbspsesame oil
  21. 2 tbsphoisin sauce
  22. 2 tbspoyster sauce
  23. 1 tbspcorn starch
  24. water

Cooking Instructions

50-70 minutes
  1. 1

    CRUSH and mince garlic, set aside

  2. 2

    FINE MINCE ginger, set aside

  3. 3

    LARGE DICE red bell pepper, set aside

  4. 4

    SLICE green onions into 1 inch pieces, set aside

  5. 5

    LARGE DICE zucchini, set aside

  6. 6

    LARGE DICE chicken breast into 1 inch pieces, set aside

  7. 7

    COMBINE all sauce ingredients, set aside

  8. 8

    COMBINE corn starch with equal parts water until dissolved, set aside

  9. 9

    COMBINE chicken with marinade, and set aside

  10. 10

    On the stove, HEAT a wok as hot as possible, then add 4 tbsp vegetable oil, and long yao.

    ADD garlic and ginger and bloom until fragrant, about 10-15 seconds

    ADD chicken to the wok and toss for 1-2 minutes until 80% cooked, then remove from the wok

    WIPE the wok down, add 4 tbsp vegetable oil to the wok and long yao

  14. 14

    ADD dried peppers to the wok and toss for 30 seconds, then add bell peppers, green onion, peanuts, and zucchini. Toss for 2 minutes

  15. 15

    ADD chicken back to the wok, then add sauce and corn starch slurry. Toss for 2-3 minutes, then remove from heat

  16. 16

    FINISH with red chili flake
