This dish is always a welcome comfort in winter and also reminds me of the days leading up to Christmas, when you can just put everything in the pot and get on with your day. It's slow-cooked in my Crock Pot, which really brings out the flavors. I hope this helps you out. 😊

These slow cookers cook very gently and use very little electricity. Just prepare everything in the morning and it will be ready by lunchtime.

Turn on the slow cooker and add 4 cups of water (about 950 ml) while it heats up.

Chop the vegetables. Sauté only the onion, leek, and garlic. Cut the tomato, onion, and leek in half so you can blend them later (after cooking).

Add everything to the slow cooker along with the spices, salt, and a splash of olive oil. Cover and cook on high.

About half an hour before serving, uncover and add the beans, rinsed with hot water.

Blend the leek, tomato, and onion that you left in large pieces.

Cover until ready to serve.
