This recipe serves as a hearty filling for tacos , sandwiches or wraps It is a 1 pot meal . You can make this dish & freeze it in an airtight container for 1-2 months & thaw & use as required. I suggest , you could freeze it in small containers & remove 1 container at the time of us .
Here 2 types of fats are used ie clarified butter & oil OR oil & butter . Use of 2 types of fat makes this dish awesome.

Ingredients

35 minutes
Makes 1 bowl
  1. 1 cupsoaked (overnight) red kidney beans (small variety)
  2. 1 tbspoon oil
  3. 1/2 tbspoon clarified butter
  4. 1/2 cupchopped onions
  5. 1/2t.spoon garlic paste
  6. 1 cuptomato puree
  7. 2 tbspoon tomato ketchup
  8. 1 tea spoon roasted jeera powder
  9. 1/2 tea spoon red chilli powder
  10. 1 table spoonsugar
  11. Salt to taste

Steps

35 minutes
  1. 1

    Soak red kidney beans overnight. Than pressure cook it for 5-6 whistles. Open the cooker when cooled.Keep aside.

    Take oil & clarified butter. Saute onions & garlic in it till golden. Make tomato puree & keep aside.

    Add tomato puree & tomato ketchup when onions & garlic are sauted properly, Add all the spices & cook for 3-4 minutes. When oil is released, add boiled red kidney beans Mix well till everything merges very well.Remove in an airtight container

    Remove in an airtight container & cool completely. Use when required. You can use this red kidney beans as stuffing in sandwiches, eat with rotis, stuff it in mini baskets & eat with rice, tortillas ofcourse. But this stuffing is best served with taco shells. Whatever takes your fancy, you can use it in.The stuffing is versatile. So enjoy an international dish in Indian cuisine.

    NB : you can freeze this stuffing for 15 days in the freezer. Than thaw it & use as required.
