My daughter declared this the best thing I've ever cooked. I don't know that I'd go that far (my lasagna's still king-of-the-hill as far as I'm concerned). But with tender beef, glazey sauce, and beans that squeak when you bite them...there's admittedly a lot to love about it.

Ingredients

10 minutes
2 to 3 people
  • 450 gflank steak, sliced into 1/2 cm strips
  • 1 tspcornstarch
  • 1/4 tspbaking soda
  • 4 clovesgarlic, finely chopped
  • 1thumb-sized bum ginger finely chopped
  • 1shallot, finely chopped
  • 1/4 cupShaoxing wine
  • 1-250 gbag French beans (haricots vert)
  • 1/4 cuplight soy sauce
  • 1 tbspdark soy sauce
  • 3 tbsphoisin sauce
  • 2 tbspoyster sauce
  • 1 tbspsugar

Steps

  1. 1

    In a bowl, mix together the beef, cornstarch and baking soda until the meat's well-coated. Put the bowl in the fridge for 15 to 20 minutes.

    Add a splash of veg oil to a wok on high heat. Add the beef and fry for 2 or 3 minutes until no longer pink and showing a bit of caramelization. Add the garlic, ginger and shallot and continue frying 1 minute until fragrant. Pour in the shaoxing wine and let simmer until most of the liquid evaporates.

    Add the beans to the wok, then make the sauce by mixing together the remaining ingredients with several grinds of black pepper. Pour the sauce in the wok and toss to coat. Let fry a final minute before serving.
