First, cut the eggplant and bell peppers into cubes. Place them in the air fryer with salt and 1 tablespoon of oil. Toss occasionally and cook for 25 minutes.

Next, fry the potatoes as usual or in the air fryer with 1 tablespoon of oil.

For the sauce, sauté the minced garlic in 1 or 2 tablespoons of oil, add a splash of vinegar, then pour in the tomato juice and cook until thickened.

Add the potatoes, eggplant, and bell peppers to the sauce, stir to combine, then bake in the oven for 10 minutes. Enjoy!
