Straw Mushroom and Soya Pulao

Steps

First, soak the mushrooms in salted warm water for 10 minutes and wash thoroughly. Drain and pat dry. Then slice them in quarters.

Wash and soak the rice for 30 minutes. Then drain. Heat a pan. Add 1 tablespoon of ghee. Add the cumin and all other whole spices. At this stage, add the boiled, drained and chopped soya chunks. Saute well.

Add onions, ginger garlic paste and saute till aromatic and golden. Then add the sliced mushrooms and corn pearl. Saute for 5 to 8 minutes.

Now add the rice and remaining ghee. Turn well and keep stirring for 5 minutes on medium heat. Now add the stock or hot water, stir well and cover with lid l.

Cook on low flame and cook till rice is done. Press with fingers, it should get pressed but not mushy. Then close the flame.

Keep covered for 5 to 10 minutes on a closed stove. This will cook it well. Open, stir in mint leaves, lemon juice, coriander leaves and serve immediately with mixed veg raita.
