Rice Pudding with Strawberry Gelatin

Rice pudding is the ultimate comfort dessert, made by moms and grandmas, and we’d rush to grab a chilled bowl from the fridge.
Simple gelatin in different flavors makes this a cool, summery, and light dessert with lots of fans.
Here, creamy rice pudding with a rich vanilla aroma pairs perfectly with strawberry gelatin—or any flavor you like.
It’s one of those easy-to-make treats that we don’t usually think to combine.
A super refreshing dessert that’s sure to be a hit!
-Try adding lemon zest to the rice pudding and using lemon gelatin for a bright, lemony treat.
-You can also add pieces of fruit to the gelatin.
-I don’t add any sugar to the gelatin since the rice pudding is sweet enough. If you prefer it sweeter, follow the amount suggested on the gelatin package.

Steps
- 1
Rinse the rice thoroughly with plenty of water and drain. Cook it over very low heat with the 3 cups of water until all the water is absorbed and the rice is tender.
- 2
In a bowl, combine 1 2/3 cups (400 ml) of milk with the vanilla pudding mix and sugar. Whisk until smooth.
- 3
When the rice is cooked, add the salt and 4 1/4 cups (1 liter) of milk to the pot and stir. Once it starts to boil again, pour in the pudding mixture and stir over low heat until it thickens.
- 4
Divide the rice pudding into small bowls, leaving space on top for the gelatin, and let cool completely.
- 5
While the rice pudding cools, prepare the strawberry gelatin according to the package instructions, let it cool until it just starts to set, then carefully pour it over the rice pudding. Refrigerate until fully set.

Enjoy!
