A friend from the garden had a watermelon split open from the heat, so to make the most of it, I decided to try this innovative gazpacho! I was unsure how it would turn out, but honestly, it’s surprisingly delicious. Very refreshing with delicate flavors. A great option for those, like me, who don’t tolerate raw bell pepper well.

A friend from the garden had a watermelon split open from the heat, so to make the most of it, I decided to try this innovative gazpacho! Prepare all the ingredients.

Remove the tough core and skin from the tomatoes.

Peel and seed the cucumber.

Remove the seeds from the watermelon.

Blend the garlic, then add all the remaining ingredients and blend until very smooth. Drizzle in the olive oil while blending and adjust the salt to taste.

Serve very, very cold. You can use the watermelon rind as a serving bowl if you like.

Pour into a glass pitcher or serve in small glasses. Always garnish with a sprig of fresh mint for a burst of flavor and color.
