Chirimenjako gamja jorim

I was craving gamja jorim - a sweet and salty Korean side dish but I could never make it like the best tasting one I've had. The best tasting one I had was at a restaurant and had an extra depth of umami. I wanted to replicate that flavor so I dug through the fridge and found chirimenjako (Japanese dried baby white fish) and tossed them in. This turned out so good, I think it's better than that one from the restaurant 😁. I mostly followed the recipe from:
https://mykoreankitchen.com/gamja-jorim-korean-braised-potatoes/

Try and enjoy!

Steps

1 hr
  1. 1

Turn on oven to 400F. Wash the potatoes and cut each in half. Coat with oil and spread onto a baking pan in a single layer. Bake for 15 minutes, toss, bake for another 15 minutes.

  2. 2

While baking, mix brown sugar, mirin, and soy sauce. Set aside.

  3. 3

Transfer potatoes into a pan with 1Tbsp oil on medium high heat. After the edges are browned, add the soy sauce mixture and water. Allow the sauce to reduce while stirring the potatoes every now and then.

  4. 4

When there's about a few tablespoons of sauce left, turn the heat to low, add the chirimenjako, honey, and sesame oil and cook for another 5 minutes. Add some water if the pan is getting too dry.

  5. 5

Turn off heat, add sesame seeds, serve as a side and enjoy!
