Tricolour Dahi Vada

Today I have made Tricolour Dahi Vada.
Steps

Wash the udad dal 4-5 times then soak sufficient water for 6-7 hours. Take grinder jar add soaked dal, ginger, green chillies, salt and grind it into a smooth paste with minimum water. Now add salt and beat the batter for 5-7 minutes to become light and fluffy, Keep aside. Vada batter is ready.

Take a grinder jar add boiled Carrots pieces and grind it into a smooth paste without any water. Then take another grinder jar add all green chutney ingredients and grind it into a smooth paste.keep aside.

Heat sufficient oil in a kadai fry small portion of dal batter on medium hot oil, fry the vada on low flame until it's cooked from inside and remove it and dip the fried vada into the hot water with little salt and soak it for 15-20 minutes then gently squeeze the vada and transfer into the curd bowl.

Then whisk the curd with salt, sugar, roasted cumin powder, mix it properly.

Now divide the curd into 3 bowls equally, 1 part mix with prepared green chutney for green colour and 2 part mix with carrots paste for orange colour 3 part remaining white. As shown in fig.

Now arrenge the vada in the serving bowl and pour the green chutney curd mixture in the one bowl for green dahi vada and another bowl pour the carrots mixed curd mixture for orange dahi vada, on 3rd bowl pour the plain curd mixture for white colour. As shown in fig.

Tri Colour Dahi Vada is ready.
