Okra Stew
The measurements are approximate; I usually eyeball everything.
Steps
- 1
Tenderize the beef with a little water in an electric pressure cooker for 40 minutes.
- 2
Sauté the sliced okra in a pan with a pinch of vegetable oil (this will remove the slime). Cook until al dente, then add a few drops of vinegar and turn off the heat.
- 3
Remove the beef from the pot and cut it into small pieces. Add it to the pan with the okra and set to low heat. Add salt, seasonings to taste, and the sliced plantains. Add the dry white wine and tomato puree, and cook for a few minutes until the sauce thickens.
- 4
Serve with white rice.
