This recipe is my grandmother's specialty, but with a few changes that give it a really great flavor.

Fill a large pot with water and add salt. When the water comes to a boil, add the spaghetti.

Meanwhile, chop the onion, green pepper, and tomatoes.

Cut the chicken breasts into strips (not too large) and slice the spicy chorizo into moderately thick rounds.

Heat a little olive oil in a pan. Add the onion, green pepper, and tomatoes. Sauté until just softened, but don’t overcook.

Once the vegetables are softened, add the chicken strips and chorizo. Season with salt to taste. I like to add a little black pepper for extra heat, but not too much so it doesn’t overpower the flavor.

Make sure the spaghetti is cooked al dente, so it doesn’t get mushy. It should take about 8 to 10 minutes. While you’re making the sauté, the spaghetti should be ready.

Drain the spaghetti and add it to the pan with the sautéed mixture. Toss everything together so it’s well mixed. Keep stirring over the heat for 3 to 4 minutes.

Now it’s ready to serve and enjoy—a dish you’ll remember for a long time.

My tip: I used a wok for this recipe. It’s great for cooking vegetables and meats, and makes everything juicier.
