First, heat ghee or butter in a pan. Add the onions, ginger garlic paste and saute till aromatic. Then add the vegetables, sprinkle salt and saute on high flame for 5 minutes.

Then add tomatoes, spices and dried herbs of choice. Sprinkle some more water.Cover and cook till vegetables are soft yet have a bite.

Now mix in the boiled rice, lemon juice, tomato sauce and saute well for 5 minutes. Then crush half of the nachos and toss well.

Transfer to a serving bowl. Garnish with more nachos or Doritos and chopped coriander leaves. Top with bits of coloured capsicums too. Serve immediately and enjoy!
