Ingredients

25 minutes
4 servings
  • 20-25Doritos/ Nachos
    Nachos Chaat
  • 1/2 cupsMixed chopped vegetables (carrots, coloured capsicum, cauliflower)
  • 1/4 cupSweet corn
    Turmeric and Sweet Corn Soup
  • 1/4 cupPeas
  • 2 cupsBoiled rice
    Mexican Burrito Bowl / Mexican Rice Bowl
  • 1 tablespoonGinger garlic paste
  • 1Chopped onion
  • 1Chopped tomato
  • 2 tablespoonsGhee or butter
  • Salt, pepper, cumin and coriander powders as per taste
  • Mexican herbs as per taste
  • 1 tablespoonLemon juice
  • 1 tablespoonTomato sauce
  • 2-3 tablespoonsWater to sprinkle
  • Chopped coriander leaves to garnish

Steps

  1. 1

    First, heat ghee or butter in a pan. Add the onions, ginger garlic paste and saute till aromatic. Then add the vegetables, sprinkle salt and saute on high flame for 5 minutes.

    Then add tomatoes, spices and dried herbs of choice. Sprinkle some more water.Cover and cook till vegetables are soft yet have a bite.

    Now mix in the boiled rice, lemon juice, tomato sauce and saute well for 5 minutes. Then crush half of the nachos and toss well.

    Transfer to a serving bowl. Garnish with more nachos or Doritos and chopped coriander leaves. Top with bits of coloured capsicums too. Serve immediately and enjoy!
