Firstly cut the brinjal in medium size. Sprinkle with a pinch of turmeric and salt.

Heat the oil in a pan splutter the zeera seeds, now stir fry the brinjal for sometimes till it becomes softif it's done take out from the pan and keep aside

Soaked the mustard seeds for sometimes and paste it in a grinder. At the same time puree the tomato in a mixer with the green chillies and onion

Now in that remaining oil splutter one bay leaf, and stir fry the sarso paste till it oil seperates now add the tomato puree, ginger and garlic paste,and sugar, cook for 15 min till it's done.

Now add all the masala given above and saute for another 5 min till it mixed well.in a low flame.Add 1/2 cup of water as per your choice to make it thin Or thick gravy in a low flame.add the fried baingan. And Cook for some time and switch off the flame garnish it with coriander leaves. And serve with rice
