Prepare the vegetables: Wash the Chinese broccoli thoroughly and slice it on the diagonal. Slice the carrot into rounds and thinly slice the cabbage.

Peel the garlic cloves, rinse to remove any dirt, and roughly chop.

Heat a wok or large skillet over medium heat. Add the vegetable oil and let it get hot. Add the garlic and stir-fry until fragrant, then add the beef and stir-fry until just cooked.

Add the prepared vegetables and stir-fry. Add the rice noodles and toss everything together.

Season: Add the sugar, light soy sauce, seasoning sauce, and oyster sauce. Stir-fry to combine, then crack the egg into the pan.

Scramble the egg gently and mix it through the noodles. Once the egg is just set, taste and adjust seasoning as desired. Remove from heat and serve.
