Place the avocados in a bowl and smash with a spoon

Add a sprinkle of paprika and chilli flakes along with salt and pepper

Slice some tomatoes up to serve alongside

Hot pan of water not boiling or simmering and add 2 tablespoons of vinegar

Crack the eggs and add to the pan making sure to stir a vortex

Leave the eggs to poach for 2-3 minutes and toast the bread

Once toasted butter the bread and sit the eggs on some paper towel
- 8
Combine all and add pepper to the eggs
