Boil the potatoes, carrots, and eggs until they are fully cooked. Allow them to cool, then peel and dice them. If you're using ham or bologna and onion, dice them

Mix the Salad: In a large mixing bowl, combine the diced potatoes, carrots, hard-boiled eggs, green peas, dill pickles, and, if desired, ham or bologna and onion.

Add Mayonnaise: Add 1 cup of mayonnaise to the mixture and gently fold it in until all the ingredients are well coated. You can adjust the amount of mayo to your preference.

Chill: Cover the salad and refrigerate it for at least a couple of hours before serving. This allows the flavors to meld together.

Serve Olivier Salad is traditionally served cold. Garnish with fresh herbs, like dill or parsley, before serving.
