This makes 3 muffin slices (1 serving). You can make this non dairy by substituting the butter for coconut oil (if you do this I would suggest you also lightly salt the muffins on step 5).

Melt 1 tablespoon of butter in the bottom of a mug using the microwave.

Add the almond flour, baking powder and egg to the mug and stir WELL (I find this is best with a fork).

Put the mug in the microwave for 1 and a half minutes.

Take the mug out (it will be hot), and empty the muffin on to a chopping board. (I find it’s best to bang the side of the mug before turning it upside down so that it loosens it first). Lau the muffin sideways and slice in to three using a bread knife.

Heat the remaining butter in a frying pan and place the muffins in there, toast both sides until golden brown and enjoy 🍽️
