Cordoban-Style Oxtail Stew

A spectacular Cordoban-style oxtail stew made in a pressure cooker. This is a traditional Cordoban stew that you can adapt to your taste, for example by adding artichokes or green beans. You can thicken the broth with a little flour, or add a cup of water or broth if you prefer it less thick. This oxtail stew is very versatile. We like to cook it a day in advance. You can serve it with roasted potatoes or pan-fried potatoes. For health reasons, I can't have salt, so I try to enjoy food as naturally as possible and without salt.

Ingredients

Serves 3 or 4 servings
  1. 2.2 lbsoxtail (1 kg)
  2. 2onions
  3. 1green bell pepper
  4. 1leek
  5. 2carrots
  6. 2garlic cloves
  7. A fewbay leaves
  8. 2whole cloves
  9. 1 1/2 cupsdry red wine (about 350 ml)
  10. 2 cupsbeef broth (about 500 ml)
  11. 1 2/3 cupscrushed tomatoes (about 400 grams)
  12. Extra virgin olive oil
  13. Flour

    Prepare all the ingredients.

    Heat a pressure cooker over medium-high heat with a generous amount of extra virgin olive oil. Dredge the oxtail pieces in flour. Once the oil is hot, brown the oxtail on all sides. Remove and set aside.

    Meanwhile, chop the vegetables.

    In the same pot, add the garlic and onions. Cook for a few minutes, then add the remaining vegetables, bay leaves, cloves, and ground black pepper. Stir everything together and cook until the vegetables are softened.

    Add the oxtail back to the pot along with the red wine. Bring to a boil to let the alcohol evaporate.

    Add the beef broth and crushed tomatoes.

    Close the pressure cooker and cook for 30 minutes.

    After cooking, open the pressure cooker, remove the oxtail pieces, and blend the vegetables with an immersion blender. If needed, let cool slightly before blending.

    Return the oxtail to the pot and let it rest.

En octubre del 2021 me extirparon un riñón con cáncer en fase número 2. Me aconsejaron evitar la sal. Así que empecé a comer sin sal y procuro comer lo menos procesado posible.Siempre me ha gustado cocinar, y ahora es cuando realmente empiezo a entender la cocina y a disfrutar de ella. Creo que cocinar con cariño, despacito, sin prisa, le da un gusto diferente a la comida. Si le añadimos algún toque de sabor es cuando no necesitamos la Sal.
