Season the chicken with a little salt. Heat 1 tablespoon of vegetable oil in a large pot, brown the chicken on both sides, then set aside.

Add the remaining tablespoon of oil to the pot and sauté the onion and garlic until they start to turn golden.

Add the bell pepper, carrots, cumin, paprika, oregano, cilantro, and salt. Sauté for a few minutes.

Add the chicken back to the pot along with the squash, corn, potatoes, rice, peas, green beans, and green onions. Bring to a boil, then reduce the heat to medium. Cook until all the ingredients are tender, about 25 to 30 minutes.

Adjust the salt to taste. Let the cazuela rest for 7 minutes before serving. Sprinkle with cilantro just before serving.
