Flaky Steak & Mushroom Hand Pies

Impressive enough to serve to company, easy and quick to make, these hand pies are a real favorite. You can change them up by adding your favorite vegetables to the filling or using a different cheese; but I prefer a vegetable side dish so the beef and mushroom flavors dominate the hand pies.

Impressive enough to serve to company, easy and quick to make, these hand pies are a real favorite. You can change them up by adding your favorite vegetables to the filling or using a different cheese; but I prefer a vegetable side dish so the beef and mushroom flavors dominate the hand pies.

Remove puff pastry from freezer to thaw. In a large skillet over medium-high heat, saute the onion and mushrooms until softened and beginning to brown. Add the beef, garlic, salt, and pepper. Stirring, cook until beef is browned on all sides, about 5-6 minutes. Remove from heat and cool to room temperature.

Preheat oven to 375°F. With a floured rolling pin on a lightly floured surface, roll each sheet of puff pastry into a rectangle and slice into quarters. Brush the egg wash around the outer edges of 4 of the pastry rectangles.

Place a slice of cheese in the center of each pastry rectangle and top each with 1/4th of the cooled beef mixture. If desired, top the beef mixture with some crumbled blue cheese or goat cheese.

Top each with another pastry rectangle, press together all around the edges to seal, and crimp with fork tines. With a knife, poke 3 vent holes in the top of each hand pie. Place on a baking sheet and brush the tops with the egg wash. Bake until golden brown, about 30-35 minutes.
