California Farm Goat Cheese Basil Tomato Tart

If you have never made inexpensive goat cheese before, here is our 2 hour recipe to make fresh goat cheese with a pan and a kitchen towel and a thermometer. All you need is lemon juice, vinegar and goat milk.
To make the cheese tart, butter filo dough in a baking pan, goat cheese , basil, cherry tomato on top, drizzle honey over. Walnuts optional. Baked in 45 minutes.

Cooking Instructions

Heat goat milk to 185F degrees, stir in lemon juice and vinegar, cool. Pour through kitchen towel in collander, tourniquet the towel to wring the whey out of the cheese, sprinkle salt over. You now have a cup of goat cheese. Done.

Preheat oven to 350F degrees. Brush half size baking sheet with molten butter, butter the filo sheets, fold edges, spread fresh goat cheese in center, cover with 12 fresh basil leaves, walnuts optional, put halved cherry tomatoes on leaves, bake 45 minutes.

Quarter the tart, sprinkle optional walnut pieces over, drizzle honey on top, serve warm.
