Ingredients

40 minutes
Serves 2 servings
  1. 3/4 cuprice (160 grams)
  2. 2 cupsvegetable broth with saffron (500 ml)
  3. 1 cupcauliflower florets, cut into small pieces (125 grams)
  4. 1/2 cupred bell pepper (75 grams)
  5. 2artichokes
  6. 1tomato
  7. Paprika

Steps

  1. 1

    Dice the red bell pepper into small pieces.

  2. 2

    Remove the outer leaves from the artichokes, cut off the stems and the top tips, then quarter them.

  3. 3

    Grate the tomato.

  4. 4

    In a paella pan, heat olive oil and cook the cauliflower florets, artichokes, and red bell pepper for 5 minutes.

  5. 5

    Add the paprika and cook briefly.

  6. 6

    Add the grated tomato and cook for another 5 minutes.

  7. 7

    Add the rice and cook for 1 more minute.

  8. 8

    Pour in the boiling vegetable broth and cook over medium heat for about 18 minutes.
