Vegetable Paella

Dice the red bell pepper into small pieces.

Remove the outer leaves from the artichokes, cut off the stems and the top tips, then quarter them.

Grate the tomato.

In a paella pan, heat olive oil and cook the cauliflower florets, artichokes, and red bell pepper for 5 minutes.

Add the paprika and cook briefly.

Add the grated tomato and cook for another 5 minutes.

Add the rice and cook for 1 more minute.

Pour in the boiling vegetable broth and cook over medium heat for about 18 minutes.
