Steps

Slice tofu into cubes.Pour cooking oil and fry tofu until golden brown.Remove and drain the oil.

In same wok and cooking oil slowly fry the eggplant cubes until half done.Then drain the excess oil.
- 3
Stir fry shallots and chilli.Then add tofu and eggplant.Splash a little water then season with soy and add celery before serving.
