I love lentils and I love Hummus, so why not put the two together! I had so much fun making this and my family ate all of it in one night. I was kind of envisioning an Indian vibe on the traditional Greek hummus. I didn't have tahini, so I substituted with a paste of cashews and sesame seed oil. The goat cheese really makes this creamy and nice on the pallet. I have decided to go on a hummus experience and I will be testing different nuts and flavors with legumes/beans. I topped mine off with diced kalamata olives and olive oil but feel free to use whatever you like. I hope you try it and if you do please share your thoughts with me. Ingredients

5 servings
  1. 1powder dry lentils (I used green)
  2. 1 tspSea salt (to taste) at least
  3. 1/4 tsppepper (opinional)
  4. 1/2 tsp turmeric
  5. 2 tspcurry powder
  6. 1 tspsmoked paprika
  7. 1/2 tspgarlic/onion powder (opinional)
  8. 4 tbslemon juice (or more, to taste)
  9. 4 tbsgoat cheese
  10. 3 tbspolive oil
  11. For the Tahini Substitute
  12. 1/3 ctoasted almonds
  13. 4 tspsesame seed oil
  14. Topping
  15. Diced kalamata olive
  16. Drizzle olive oil
  17. Finely minced cashews (opinional)
  18. Sprinkle of smoked paprika (opinional)

Cooking Instructions

    Measure all dry ingredients into a small bowl and set aside

    Rinse lentils and cover with a few inches of water > bring to boil snd stir > cover and simmer for 30 minutes > test for tenderness every 5 minutes if not done after 30

    With a slotted spoon take out 4 cups of lentils and drain > cover lightly and let drain for a few minutes (you don't want soggy hummus)

    Blend almonds, sesame oil and dry seasonings in food processor until creamy

    Add lentils, olive oil and goat cheese then blend for your life! I made mine with an immersion blender so I used a bowl but you can do it all in a food processor as well

    Add lemon juice and blend well > taste for seasoning and add more lemon juice or salt if desired

    Serve immediately and top with olive oil, kalamata olives, nuts and smoked paprika

    Optional - cut pita bread or any thin flat bread into strip and fry in a little oil of your choice for 20 to 30 seconds on each side until golden and crispy.
