In a mixing bowl put grated boiled potatoes, sago flour, cornflour, soaked sago pearls, salt, chaat masala, fresh green chillies, grated ginger, black pepper powder, crushed peanuts and chopped coriander leaves. Mix all well to form a thick vada mixture. Brush a tsp of oil on the mixture nicely and keep in fridge for 10 mins. This makes the mixture easier to handle.

Now heat oil. Meanwhile grease your palms and take small portions from the prepared mixture. Make small vadas.
Fry these by flipping sides till they are golden brown and crispy. Drain extra oil and serve hot. - 3
