Peel the yuca and cook it in a pot of salted water until it's soft but not falling apart. Drain and let it cool slightly to room temperature.

Grate the yuca or use a manual grinder if you have one. Mix with the margarine and salt, then knead well.

With damp hands, shape the arepas and cook them in a skillet with a little oil over medium-low heat for about 5 minutes on each side, until golden brown on both sides.

Cook the eggs. Place cheese on top of the arepas and cover the skillet so the cheese melts.
