Pak choi, also known as bok choy, is similar to Swiss chard with long green leaves.
Steps

Heat a wok or large skillet with the oil over medium heat. Sauté the garlic and ginger.

Add the bell peppers, carrots, and eggplant. Stir-fry until slightly tender.

Add the bok choy leaves, Napa cabbage, and bean sprouts. Stir-fry until just wilted.

Add the oyster sauce and hoisin sauce, and mix well.

Serve immediately.
