The original lahori chargha is cooked in two steps, it is first marinated then steamed and finally deep fried until golden and lightly crispy, but sometimes it is roasted instead of deep frying, roast in a clay oven, but you can use the modern ovens, it is usually served with french fries, salad and green chutney and enjoy. Ingredients

  1. 1skinless whole chicken 🐓
  2. 11/2 tspkashmiri red chilli powder 🌶️
  3. 1 tspcoriander & cumin powder
  4. 1 tbspchillies flakes 🌶️
  5. 1/2 tspblack pepper powder
  6. 2 tbspcorn flour 🌽
  7. 1/2 tspgaram masala powder/ 1 tbsp chicken chargha masala powder
  8. 11/2 tbspginger garlic paste 🧄🫚
  9. 1/4 tspturmeric powder
  10. 1 tbspgreen chillies paste
  11. 1/2-1 tspChaat masala
  12. Salt to taste 🧂
  13. 3 tbsplemon juice 🍋
  14. 3 tbspoil
  15. 1egg 🥚- optional
  16. To serve with : salad 🥗, green chutney, lemon slice 🍋, french fries 🍟

Cooking Instructions

    Wash whole chicken 🐓, pat dry with kitchen towel, when dry up place deep cuts on the chicken 🐓 with a knife 🔪, keep aside. Also tie the legs of the chicken 🐓 with a cotton thread. (Note : remember to remove the thread before serving)

    Take a bowl 🥣, add kashmiri red chilli powder 🌶️, coriander & cumin powder, red chilli flakes 🌶️, turmeric powder, garam masala powder/ chicken chargha masala powder, black pepper powder, ginger garlic paste 🧄🫚, green chillies paste, salt lemon juice, add 1/2 tsp Chaat masala powder and keep another half for sprinkle, egg 🥚, oil and mix well

    Take marinade and apply on the chicken, marinate chicken 🐓 for 1hr or keep overnight in the fridge, preheat the oven at 180°C, lined a sheet of butter paper/ aluminum foil, add marinate chicken 🐓 and roast for one hour (1hr). Serve with salad, french fries 🍟 and etc. Sprinkle with Chaat masala powder, lemon slice 🍋

    Note: the best tasting
    substitute for pheasant is chicken 🐓 or 🦆 duck. The cooking time will increase for a bigger bird if used.
