Udon is a thick noodle made from wheat flour, used in Japanese cuisine. There are a variety of ways it is prepared and served. I have prepared it in a simple Indian way

Boil water in a pan. Add salt, 1/2 tsp cooking oil and noodles and boil for 2 minutes.

Transfer it in a colander. Drain all water and wash it with cold water and drain water completely.

Wash, peel and chop onion and Capsicum length wise and very thin.

Heat cooking oil in a wok. Add chopped onion and saute for 30 seconds. Add chopped capsicums and saute for 1 minute.

Now add boiled udon noodles, salt, maggi magic masala and chilli flakes and mix well. Cook for a minute.

Now add white vinegar, soya sauce and tomato ketchup and mix well. Saute for 2 minutes. Switch off the flame.

Serve hot.
